Hi
Please can someone give me some advice. Today I followed this recipe for Marigold Jelly but instead of Marigolds I used Elderflowers.  http://www.celtnet.org.uk/recipes/miscellaneous/fetch-recipe.php?rid=misc-marigold-jelly. 
It says to cook rapidly for 15 minutes and test for setting and then again after another 5 minutes and again if necessary. I kept on doing this but even after 1hr15 it wasn't really set, just a bit gloopy and by that time it had lost about three quarters of the quantity and no longer tasted like elderflowers just very sweet apples.
I cant think its pectin as it uses 2.5kg of apples as a base. Can anyone tell me how to make it work next time.

Sounds like you missed the setting point

I tried dandelion syrup last year and it set so hard in the jars we had to throw the jar as well as nothing would budge it ::)
