I am in the middle of mincing and putting in jars with oil.
Last years had very strong scent this years almost devoid of scent. In fact last years still has a stronger scent than this years. Same type of garlic using last years bulbs.
Only thing I can think of is I may just may have left them in the ground for a bit longer.
Anyone any ideas?

Does the scent matter so much, what's the taste like?

Have you added any fertiliser or garden compost? I apply garden compost to the soil beforehand, use pelleted chicken manure during the growing season and got some garlic, onion and shallot fertiliser from elixir this year that I added a couple of times to keep things well mineralised (N, P, K) with great results in both aroma and taste.

Arhh I think you have it. I don't think dried them long enough. I have some more which keep meaning to mince. I will see how they go.
