I've been having a good play with my dehydrator on my veggie crops this year. One thing that was bothering me was knowing how much of the dried veg to use, because they're so tiny when dried. So I weighed a batch of 150g French beans, which is about the amount I use as a serving for two people, dried them and then reweighed, and they came out at 14g. So essentially you need to weigh the dried veg and multiply by 10 and that's how much it should be when rehydrated. I'm not sure if it works out the same for all veg, but I suspect runners would be much the same.

Apologies if I'm telling anyone how to suck eggs, but I know there's a few people on here who are experimenting with dehydrating, so I thought it might be useful info for someone.

Yes you are right I read it somewhere about 10% for it to store safely.

I bought a Wolf dehydrator from Amazon. I don't know what the capacity is exactly, but it has five good sized trays, plenty of room unless you're going into mass production :)
