If you want to bake something different for Easter
« on: March 20, 2012, 13:25 »
Easter here in Bulgaria is quite important and they have many traditions, one of which is Kozunak or Easter bread. The problem is that all shop bought contains sugar which we can't have so I thought I would do a pre-easter trial to see if I could make it.
I used the recipe on the link but substituted fruit sugar instead of normal sugar. I have to say I couldn't taste the difference to shop bought and it didn't last long.
If you fancy something different instead of hot cross buns and like baking bread, try this. It is lovely on its own and toasted with butter is divine. I used half the measure of ingredients and it made quite a big loaf. I did take a photo but only after most of it had been devoured ::)

That looks lovely, send me some through the ether  ;)
The recipe is very similar to Greek Easter bread but that has red dyed eggs set into it.

It also has mahlepi spice in it, which I can't find here in the UK  :( so I'll have a try with your one instead  :)

that sounds lovely I think I shall have to give this a go, thanks.
JMW - according to my cup measures it seems that a cup is 250mls, hope that helps  :)
Staffies are softer than you think.

Hi JMW, the measuring set I have and use has cups and ml. The cup one says 235ml if that helps.

Just meant to say that when I was adding the flour I did so a cup at a time and only used 5 cups, I think my eggs were only small, the 6 cups would have been too much and the dough would have been to heavy to work.

I think you can add raisins or sultanas if you wish.

Oh dear mosslane, I am deffo going to have to try this when breadmaker is empty :) Just trying a malt loaf for the first time, your bread looks a bit like chollah, the Jewish bread, which is also plaited if my memory serves me correctly

We still hover between imperial and metric measures here. One cup equals 250 ml or 8 fl oz.

Dry measure is just the cup measure levelled off.

That looks like a really nice loaf, Mosslane.

Polish/Ukranians make Paska for Easter, a richer version of yours and ours is round. This is similar to my mum's recipe:

we love the greek easter bread , the lady next door to us had a big domed oven outside and she would do loads of it and allways gave us some so i would recipricate with the hot cross buns which all my neighbours were intreaged with because of the cross and simnelcake with the balls , iallways gave mine after easter because they are best warm and buttered and my friends wouldnt touch the dairy and they would have so much stuff made , but the smells , i do miss them

Woman cannot live by bread alone , she must have cake , biscuits cheese and the occasional glass of wine .🍷
