Encouraged by Poolfield2's Almond Cookies I'm back into making biscuits and cookies.
It doesn't take long to make a batch and fill a tin & with 3 hungry kids it doesn't take long to empty!!
Bought biscuits tend to be all empty calories, fat, sugar and white flour but home-made can be much more nutritionally balanced.

Heres one of my favourites - Whats yours??

sunflower seed and date cookies
150g Butter, softened
100g Soft Brown Sugar
1 Egg
225g Self Raising Flour  ( could be wholemeal)
100g rolled Oats
100g Sunflower Seeds
100g chopped Dates

Beat butter, sugar and egg til smooth
Stir in remaining ingredients and mix well
Roll desertspoons of mixture into balls and place on baking tray
Flatten slightly with a floured fork
Bake at 180C for about 15mins til browned
Cool for 5mins before transferring to wire rack

Ooo Celjaci, glad to know you've startwed baking cookies again, I'm sure your family will be thrilled with the results. My kids are both grown up now Boys aged 26 and 23) but they too bake and make meals for friends so I've passed it on to the next generation which is so important.

I'll have a go at your recipe but substitute spelt flour and baking powder for the SR flour so that I can eat it, thanks
