Almond Cookies

Just made a batch of wonderful cookies using white spelt flour as it doesn't give me the gripes, all my friends that do eat wheat liked them as well so there aren't any left now ::)

Moist Almond Cookies

4 oz white Spelt flour
4 oz butter
4 oz caster sugar
4 oz ground almonds
1 egg, separated
1 tsp vanilla extract
whole almonds for decoration


Cream butter and sugar, stir in egg yolk, flour,ground almonds,and vanilla. Bring mixture together and roll into 24 small balls. Spread out on a couple of lined baking trays and press an almond onto each one. Brush with egg white and bake at 180 C (gas 4?) til lightly browned and spread out, about 12 mins. Leave on tray for a minute to firm up before moving to a rack to cool.l

Thanks I'll try that out tomorrow - I like the recipes where you roll into a ball or put a teaspoon full onto the baking tray - cant be bothered with rolling out and cutting out
Playing all the right notes but not necessarily in the right order!

The recipe said they keep well but as they had all disappeared by the next day I'll never know. I've been making a different kind of biscuit each week to take to a meeting and I've got one week left. I'm trying to think of one that doesn't have oats or ginger or coconut in as I've done all those. All I can think of is shortbread.

love anything with almonds yum yum .
if anyone has a bero book in the quick cook part there is a cookie recipe for chocolate and ginger these are really good and you can adapt them as well .

Loved the almond cookies (  though I substituted almond essence for the vanilla essence )
