Title: Celeriac and squash bake

I made an experimental dish last night and found it delicious.

Layer onion, celeriac and butternut squash in a baking dish. Season, dot with butter and sprinkle a little grated orange zest between layers. Cover with grated cheese. Bake in a hot oven.

If anyone has tips on easy peeling and preparation of the above veg I would be grateful.  ;)

That's sounds lovely. I usually cut up the butternut & celeriac into smaller pieces before peeling.

Celeriac - quickly and get lemon juice on it. :D I grate it for remoulade and find the quickest way, to hinder browning, is to use the food processor. These also usually have a slicing blade. :)
