Gathering new Seeds

Gathering new Seeds from my sunflowers and sweet peas is this ok to do this? there all dry im cutting the heads off the sunflowers (no flower left on it now) and going to dry the head out... before the birds eat all of them, and just taking the pods off the peas (the pods are dry) and popping them into a paper bag for next year

Rather than waiting, you can just pop the cut sunflower heads and sweet pea pods straight into paper bags or big envelopes and leave the seeds to fall out in their own time.
