I go on trial and error!  Some are great after six months and go off rapidly after that, others need years to be palatable.   As a rule, strong-flavoured, tannic wines need longer to mature than very light, fresh-tasting ones.  Another advantage of maturing in bulk is that you can pinch a bit off to taste every few months (I bought one of those basters like a giant teat-pipette from Wilko) without opening and recorking bottles.  If you only take out a teaspoonful you won't need to top it up, even.

If you have a freecycle in your area it is worth asking on there for brewing kit as a lot of people try it and then give up after a while and want rid of the stuff, also I have found car boot sales good

definatly ask on freecycle i ended up getting 12 demi johns a fermenting bucket and loads of the little nick nacks hydrometer chems and even a wine kit definatly a good place to start wine making
