Hare in Ale with Saffron

1 Large Hare (cut into pieces)
1lb Onions
1 1/2 pint of Real Ale
8oz Fresh breadcrumbs
1/2 Teaspoon saffron
Salt and pepper
Dripping (or oil / butter)

Pre heat oven - gas mark 7 (220degsC)
Lightly brown hare pieces in a little dripping (in a deep casserole)
Cover with real ale, add finely chopped onions and bring to boil.
Place in oven - cook for 3 hours until tender
remove from oven , reserve the hare
Place cooking liquid into a saucepan, stir in breadcrumbs and saffron
adjust seasoning
Serve the hare with the sauce

(goes well with Goey parsnips - which are parsnips sauteed in butter in a heavy skillet and spinkled with nutmeg)

Oh and a nice bottle of ooomphy red wine

thanks for that i hope to bring one back from scotland when i leave . i shoot one hare a year and no more and this year it may be a blue hare ,if it is my hares at home will be safe for another year .i counted 7 on a 17 acre field last spring . love to see them
still alive /............

Have'nt had a Hare for years that recipe sounds lovely,,, what's with the only having one a year thing Muntjac are they endangered or something?

no hayley its a thing i do to conserve them but still take a treat ,they are after all a true spirit of the fields and hedgerows in my book :wink:
