just got around to trying a new receipe today chana masala very tasty with pilau rice usual recipe.
What shall I do next week vegetarian?
I've got in stock
brown rice
spaggetti
lentils
chick peas
butter beans
assorted nuts
pots
leeks
carrots
parsnips
beetroot
garlic
loads of spices
eggs
cheese and all the other basics inc flour marg ect

Used to love a veggie hot pot.  :tongue2:  Chunky carrots, spuds, leeks all in a sauce with cheese, parsley and a sprinkling of nutmeg. 

Really must look through my veggie book as we don't eat much meat anyway.... :)

I really enjoy brown rice these days now I have found an absorbtion method to cook it that I really enjoy eating.  I cook a big pan full and freeze it in tubs for quick meals.

It makes a great pilaf with veg and spices.  I lightly fry the spices and veg, then turn in the cold rice and heat it through.  I've also stirred in cubed up cheese at the end to half melt.  Would recommend trying that  :)

Don't know if the UK has it but we can get parboiled brown rice here, which helps a lot - only 15-20 minutes cooking time.

we can get sachet's of frozen cooked rice not sure about brown though  :)

Not at all m'dear  :)  This is from a Madhur Jaffrey book  :)

13 fl oz brown rice - washed and drained
1 + 1/4 pint water
3/4 tsp salt
2 tbs butter (optional to serve)

-Soak the rice for 1 hour.  I tend to mix up veg or chicken stock and soak in this and then don't put any extra salt in.
-Put in a pan with a tight fitting lid and and with a sheet of foil on hand to go between the pan and the lid.
-Bring to the boil, add salt if using, cover with the foil and the lid and turn the heat to very low.  Cook 35 mins.
-Switch off heat and leave it sitting covered for 10 mins.
-Fluff with a fork and stir in butter if using
-If you are going to freeze the rice, cool it quickly and get it into the freezer sharpish

I buy brown basmati rice from the world food aisle in Trashco. Very nice  :)

I was only looking through one of her books last night after reading this post.   I use her method for white rice and it works a treat.  :D
