Title: Vegetarian Samosa pie

We designed this dish over that mundane period between Christmas and new year. And it has become a total hit. Only yesterday we found there are parallel inventions of this dish. But ours is our own idea. Trust  me.

Prakash’s Vegetarian Samosa Pie
For thin vegetable base. Thicker one double the quantity of mix veg and potatoes.

Onion 1 large
Garlic 2 cloves
Oil - 2 tbsp
Turmeric- 1 tsp
Coriander seed powder- 1 tsp
Cumin powder- 1 tsp
Chilli powder - a little bit
Garam masala - 1 tsp
Fennel seeds - 2 tsp broken in pestal and mortar
Frozen mixed vegetables (chopped ones. Or finely chopped carrots, peas, beans) - 1
cereal bowl
Potatoes- 2 medium
Puff pastry sheet -1

Chipshop style curry sauce powder - for gravy

Method
Preheat oven at 220 degrees/200 fan
Chop the onions and garlic fine.
Peel and chop potatoes fine at 1 cm cubes.
Heat the oil in the pan. Add onion and garlic. Toss it once and add turmeric, coriander powder, cumin powder, chilli powder and bit of garam masala (the idea is to have only little but flavouring inside).
Toss it until soft. Now add the frozen mixed veg and the potatoes. Toss it and add now the crushed fennel.
Season with salt. Add two tablespoons of water (so it wont stick at the bottom). Cook for 5 mins over medium flame covered. Open and stir again and cook for another couple of minutes until tender.
In a pasta bake tray transfer the cooked mixture and level it. Now layer it with the puff pastry. Keep the off cuts.
Wash the top of pastry with milk and put it in the oven for 16 minutes. Check at last couple of minutes the top is not burning.

While the dish is in the oven. Make the curry sauce but at gravy consistency. So 3 tbsp for a pint of water. Check salt content in the sauce and season it if needed.
Arrange the offcuts on a baking tray.

When the dish is done. Take the dish out and put the offcuts for about 9 minutes.

Cut and serve the pie and top it with curry sauce gravy. By this time the offcuts would have been done. Bring it to the table and leave it for final mopping up of the gravy.
