Pasta bake here.

I made a huge batch of spag sauce over the weekend, mostly to spirit many courgettes away, to stop them putting the fear of god into OH every time he went into the kitchen.  That made a good base and some pasta and cheese sealed the deal  :)

For some reason I had frozen a whole 1/2kg pack of mince, instead of in individual portions, so I cooked it all with onion and tomatoes, peppers and garlic. I had some with fried potatoes, Tromba squash and some sweetcorn. All homegrown veg
It's not often that happens :)

I'd bought some bone in and skin on chicken thighs for somethings specific, but for the life of me I can't remember what it was. Boned a couple and put them in the oven with garlic and ginger and some mushies, served with veggie rice.  Put the rest of them in the slow cooker with casserole veg as they were on the used by - felt like such a waste.

I warmed up some of the mince and added chilli and beans and served it over rice with sweetcorn and salad bits on the side  :D
The rest of the mince is now in the freezer - enough is enough

I put some of the chicken casserole with mash. It was a nice change, I honestly can't remember the last time I made a chicken casserole. I've left a portion out for tomorrow but 2 days in a row will be enough and the rest is off to the freezer.

We had pie (shop bought), oven chips and veg last night as we were running late and both of us were tired.

Tonight is going to be chicken and a brown rice pilaf. I’ve got greenhouse peppers and probably other veg lurking that could do with using up. I’ll put some spices on the chicken and probably in the rice as well  :)
