We had a post swim trip to the Well Known Burger Franchise Emporium this afternoon, so all we wanted tonight was something light. Hummus and crisps for me!

I had to make some battered courgette crisps to convince the family to still eat them ;)

More veggie rice, if Id have planned ahead there would be a slice of gammon with it  :nowink:  I might raid the spice cupboard to see if I can make it a bit more interesting.

Can you make it into egg fried rice ? With maybe some prawns & chilli?

No eggs anymore  :( Last of the girls died a few months back and I'm currently refusing to buy the revolting things they pass off as eggs in the supermarket.  ::)  I grabbed a can of mixed bean salad,an onion and some garlic and raided the spice cupboard - it wasn't bad but could have benefited from something meaty (even prawns).

I had a lot of runner beans that were a bit to seedy to eat green, so shelled and cooked the beans and made some bean burgers. Had them with salad and cheesy chips  :)
