Next week I am going to be making a number 1 cake in a sponge mix my question is I have a recipe that I always use for an 8" cake how much do you think I would need to increase the mix by ?

I would at least double it, how many eggs does your recipe say? I'd think at least 6 eggs for a basic victoria sponge mix.You can always bake some fairy cakes if you have any mix left over.

My recipe book says to measure how many pints of water the tin can hold, and then use

2oz butter,
2oz sugar,
1 egg,
2oz flour................for each pint you measured
