That looked good & I'd never have thought of it. I use egg shell to egg shell but I have seen it done by breaking on to a saucer & then popping an egg cup over the yolk & pouring the white into another bowl.

Trillium my favourite sponges are always the ones with little fat and  a lot of whipped up egg white :)
