Does anybody have a recipe for a cake that had cold tea as one of its ingredients?  My mum would love a copy of the recipe as she would like to try some.  I don't know if the one a relative used to make was specific to the Forest-of-Dean but any versions would be appreciated.  :happy: :happy:

I've only ever seen it as an ingredient in a fruit loaf:

450g / 1 lb mixed dried fruit
300ml / 1/2 pint cold strong tea
200g / 7 oz dark brown sugar
grated rind and juice 1 small orange
ditto 1 lemon
1 egg, lightly beaten
200g / 7 oz plain flour
15ml / 1 tbsp baking powder
1.5ml / 1/4 tsp salt

Mix dried fruit with cold tea and soak overnight.
Preheat oven 180C / 350F / Gas 4.
Line base and sides 23 x 13 cm / 9 x 5 " loaf tin with greaseproof paper, grease the paper
Strain the fruit, reserving the liquid
In a bowl, combine sugar, orange & lemon rind, and fruit
Pour orange & lemon juice into a measuring jug; top up (if necessary) to 250ml / 8 fl oz with the reserved soaking liquid
Stir citrus juices & egg into dried fruit mixture
Sift flour, baking powder & salt together into another bowl
Stir into the fruit mixture until blended
Transfer to tin & bake until skewer inserted into middle comes out clean (about 1 1/4 hours)
Leave in tin for 10 mins before taking it out.
I try to take one day at a time, but sometimes several days all attack me at once...
