How to freeze apricots
« on: July 26, 2011, 21:27 »
Hello
I have been given masses of apricots!  I've already made plenty of jam and thought maybe I could freeze some.  Any help on how to do this would be appreciated.  I will probably have masses of plums, damsons and apples a bit later so would be helpful for advice on freezing these aswell.
Many thanks

Not sure about whether to remove the stones first, but open freeze them on trays in the freezer before bagging up later.
I try to take one day at a time, but sometimes several days all attack me at once...

I've frozen them both with and without the stones. If they're cooked from frozen and you try to take the stones out it can make them look a bit messy, but it doesn't matter too much if they go into a pie.

On balance though, I've found it's easier to stone them first, when the fruit is still firm.

I've always frozen apples by first peeling, coring and slicing them, then packing them into good freezer bags, squeeze out excess air, and straight into the freezer. I do a few bags at a time and chuck them into the freezer rather than doing a huge batch and letting them discolor.

I don't add sugar or ascorbic acid and they've always been just fine for whatever I need them for. They'll lump up a bit but use a dull knife to separate them.

I do plums the same way except I just wash the skins, pat dry, stone them, then freeze.

Thanks for your replies.  I've seen a recipe for Apricot Fool where you make a compote first - do you think I could freeze at this stage also?
