Usually fine polenta or cornmeal, but you'd lose a lot of taste....

It is a fine bright yellow powder, rather like a brighter coloured polenta.

It's sort of like a wholemeal/less fine version of cornflour IYKWIM and it usually still looks a bit yellow colour, from the corn  ;)

You want the medium grind, which is perfect to make Polenta, and sometimes that is what it's labelled as. For some reason the shops seem to charge more for stuff labelled polenta than they do for cornmeal  :dry:

In Trashco it's where the rice and semolina is, sometimes also where the foreign ingredients are.

lovely thank you ladies  ;) this is what my mother should be for, but seen as she cant even cook a chop without turning it to charcoal she is not the best person to ask.

No one ever taught me how to cook. It was chips, chips and more chips when we were kids, thats why I went to nans 6 days out of 7.  Her meals were predictable and basic bless her but at least we saw some veg ( cabbage, peas, carrots lol ) she was elderly thats what they ate.

Sounds like my mum and grandma. :lol: :lol: Grandmas's Sunday lunches and steak and kidney puds and pies were to die for. Although I am sure she would have approved of my tweaking with her recipe and replacing the stock with red wine. :lol: :lol:

I find my cornmeal in the ethnic food aisle in Morrisums. It is cheaper there too. ;)

I'm sure you will but read the ingredients some polenta is wheat based as opposed to corn ;)

It also goes be the name "masa" or "masa harina". The brand I get is called MASECA. I find it in the international food aisle (with the Latin food). Bob's Red Mill makes it as well but I find that brand is much more expensive and you get a lot less. It's certainly gluten free, but I don't know if it's been processed in an allergen free factory.

Just checked the bag of maseca I have. It's the "masa instantáneo de maíz" and says it's "instant corn dough flour" For some reason I kept thinking it had the texture of cornmeal, but I opened the bag and I looks and feels like regular flour. Maseca's website has a bunch of recipes that might be worth a look too

Here's one for churros you could substitute the eggs for ener-G egg replacer?

Florence can eat wheat based tortilla, Harry cant but I have found a recipe that calls for rice flour

As for the rest I need to research more.  :blush: been a bit manic this afternoon but I will have a look asap. Xx
