I'm not all that keen on turkey. I'm thinking goose. What do you plan to cook?

In-laws for Christmas & father-in-law does the cooking.  It'll be turkey. In fact I know exactly what will be on every course!

... but it is all darned good and I'm looking forward to it.  Pity is they don't have a dishwasher!  :(

I'm doing goose. I'll be keeping the goose fat to use in other stuff. Dunno why I don't have it more often. Want to do either a ham-on-the-bone or a big beef roast for new years. I just hope what with the poultry scares etc that I'll be able to GET goose  :shock:

Don't like turkey so I always buy a couple of chickens from the farmers market. So far not one of them have realised they are not eating turkey!!

I'm just hoping I don't have the flu again this year!  Last year poor little me was shivering on the sofa, wrapped under 15 quilts (well maybe one but it wasn't enough!) and my horrible horrible children still insisted that Christmas dinner had to be on Christmas day and that no they couldn't possibly cook it themselves.  So i did, but felt so grotty I could barely touch it myself.  Still, that did mean lots of left overs, and truth be told we all prefer the left overs anyway!  Going cold and then being rehashed as bubble and squeak, or turkey and stuffing butties changes and improves the flavour of every part of the dinner, except the roasties which have to be eaten on the day!

Got it in one.

How many folks are you cooking goose for?  It really doesn't go far since you'll get a lot of (lovely) fat and the bones are also quite heavy.  If you allow 1kg per person then you might be surprised how little is left over.

Yep. I last cooked goose for Christmas about 4 or 5 years ago. I didn't realise how good the goose fat was when i cooked it back then. Now I can buy the stuff in jars, it is quite expensive though. There's nothing quite like it for doing roasties. I found later that it has very high amounts of "good" fat.

Duck is similar. When it's roasted, it drops a lot of fat. Self-basting really.

I feel better about eating goose and duck. They can't be as intensively farmed as other species. At least that's what i think. Am I right?
