Title: what bean would you get from runners and dwarf beans
Post by: chickpeacurry on September 21, 2014, 19:17
I have loads of runner beans and dwarf that are very large.  Too many to dry out could I just use th he beans in soup or make pate with them.   Would I need to boil them vigorously to avoid toxins. Any ideas what I could do with them.

I think if you used them fresh you would just cook them as if you were going to eat them in the pod. If you dried them I think you would need to soak & boil rapidly as you would for red kidney beans. I'm intending on freezing some fresh & will cook them as a veg from there.

I de-podded and cooked my overgrown runners last year and they were lovely. Previous years I had thrown the overgrown ones on the compost heap! I also froze some of the beans after blanching and they were just like bought frozen soya beans. I liked them so much that I grew a variety this year which is supposed to be good for eating the beans fresh.

Thanks I think with the amount I have it will be difficult to dry them all out. I will de pod and eat them fresh this way I should not have to boil them vigorously. I think I will use them in salads and soups. The dwarf beans are easier to dry out runner pods.  Last year when I tried to dry out runners I didn't have the heat and huge thick pods. They went mildly. I don't like to waste them so will use the bean fresh. Has anyone made a pate or mash with them. Thanks

You could probably look for broad bean recipes e.g. humous type ones for a pate.
