If it is a packet of seeds you have bought that are labelled salad leaves, they are usually designed to be used as a cut and come again crop.  If you space them out they will grow into full plants.  If you plant them closer together, you get lots of small plants that you can pick leaves off as and when you want them.  They usually last quite well in an unheated greenhouse at this time of year and you can pick them for a few months.

I am not sure what mix you have, but the packet will say.  Usually salad leaves are mixes of loose leaved lettuces, mustards, oriental greens and other leafy fast growing greens that can be eaten raw like rocket or lambs lettuce.
