This recipe uses a sweet pastry base - if you are lazy (I am!) you can buy a pack of ready roll dough in the butter aisle of the supermarket.

BASE:
1 cup plain flour
1/4 cup
1/4 cup self raising flour
2 tbsp cornflour
2 tbsp icing sugar
125g chopped butter
2 tbsp water

FILLING:
2 eggs
1/4 cup brown sugar
2 tbsp maple syrup
1 cup pumpkin puree
2/3 cup evaporated milk
1 tsp cinnamon
1/2 tsp ground nutmeg
pinch of allspice

For the base:
1. sift flours and sugar in a bowl and rub in butter. add enough water to make cling together.  press dough into ball, knead on floured surface until smooth, cover and refrigerate for 30 minutes
2. roll out dough until large enough to fill 23cm pie dish.  ease into the dish and sides and trim edges.  use scraps of pastry to make a double edge of pastry (put it back on edge ina pretty fashion)
3. line with paper and baking beans and blind bake pastry in a moderate oven for 10 minutes, remove beans and paper and give it another 10. cool.
4. for filling beat eggs sugar and syrup until thick with electric mixer, stir in pupkin, milk and spices.
5. pour filling into base and bake in moderate oven until set.

moderate oven  = 190 celsuis
