lemonade
« on: December 07, 2012, 19:27 »
Due to a senior moment, I have rather a lot of fresh unwaxed lemons which I have no plans for. I was thinking some adult lemonade might be the answer.

Does anyone have any a recipe? something like a traditional lemonade taste, fizzy with a bit of a kick (5-6%) would be nice.

This is one I like to make and dilute with cheap fizzy water or with a little gin and fizzy water.
Or even a lot of gin and a little fizzy water.

4 lemons
700g sugar
finely grate the lemon rind and put in a pan with 450ml water and the sugar simmer until the sugar has disolved. Leave to stand overnight then strain into a jug and add the strained juice of the lemons which should measure 300ml.

Use as desired.
An added extra when making, which gives it an additional grown up flavour is to add a handful of  rosemary sprigs, to which you have given a bit of a bash with the bottom of the saucepan to bruise and release the flavours.
Add this at the simmering stage.

I have also added some crushed Juniper berries or mint if it is for the summer.

You could also do something similar with a bottle of vodka. No water just put loads of lemon peel in to a large jar with a few tablespoons of sugar depending on how sweet you like it and just let it sit. You could add juniper berries or allspice or cinnamon.
Once I have got Christmas over and done I think I am being enthused (rather than infused) to have a go at this alchohol making lark.

make some limoncello - this is the easiest recipe I've seen  :)

This one takes longer but is more authentic

The choice is yours  ;)

Vodka and I don't get on, it's my tequila   :D

I might try fermenting your lemonade recipe though Mrs Ball.

Wel if it turns out well, I would like to know how you didit so I can have a go in the new year when the lemons are in season

If you don't like vodka why not use rum?
I get les alchohol pour les fruits when in France to use for things like lemoncello and other fruit based liqueurs. :)

Well I've given it a try :D

1 Bag lemons (500g) - peel / juice
900g Sugar
100g sultanas
Water to 1 Gal.
1/2 t tannin
1 t yeast nutrients
1 t EC1118

I'll let it run for a couple of days then rack off the pulp.  I was tempted to put a vanilla pod in there to take the edge of the lemon, but couldn't find where Id left them  .

Oh dear
Perhaps I will stick with my recipe as lemonade and not try to ferment it.

Was it really dreadful or might it improve with keeping?

I remember making some lemon and lime chutney and we all agreed it wasn't very good so I gave it away to get other feedback. Three months later i found the remaining jars and tasted again and it was gorgeous, especially with a curry.

The worst thing is I threw away my recipe notes for it too. >:(

OH did this with some wine many years ago but after leaving it was really lovely. i think it was a banana and parsnip sauterne.
