Hello all,

Just making some Gooseberry wine and it has started fermenting by itself.
My question is, if l put in campden tablets will it kill the pectic enzyme in the must?

Thanks in advance,

Silky

One of their uses is to add them towards the end of fermentation to stop the process before all the sugars are converted.

Thanks Argyllie, yes l want to kill the wild yeast that are in there and replace it with cultivated yeast but l wonder if l put it in now if it will stop/kill the pectic enzyme?
