hi all, has anyone tried parsley honey,have a real glut and found a recipe for parsley honey they say they use to make this when they couldn't get any honey in the war jan

Sounds interesting, what's the recipe Jan ?

125-150g 4-50z fresh parsley
 900ml 1 half pints cold water
 450g 1lb granulated suger or preserving sugar,warmed
1 dessertspoon vinegar or lemon juice

wash and pick parsley,then chop roughly,including the stalks.put into a pan with the water,then bring to boil.continue to boil gently until water is reduced to 600ml 1 pint-about 30 mins.strain off this parsley water and reserve. rinse pan,then pour back the parsley water,add warmed sugar then heat gently until sugar dissolved.bring to boil,add vineger or lemon juice and boil slowly until a little of the mixture,when tested is of clear-honey consistency.this will take abouy 30 mins.pot and cover in usual way.
