I have some beetroot that have been in the ground for months because they never really took off, low and behold you go away for 2 weeks and they are the size of sugarbeet. Whaddya reckon my chances are of them being any good to pickle?

Ha, after a lot of considered thought, I've decided to bung them. I have a good size stock pot and I would still only be able to cook them 1-2 at a time, roughly 1 hour, x 50 beetroot, thats quite a lot. Nor do I have the necessary volume of jars (hundreds!) to store that volume of pickled beetroot in. Better planning needed next year!
