pickled beets

if i want to pickle some beets just plain and simple no spices, do i just cook as per pickled beetroot recipe on here and add plain ol vinegar?
white or brown - and do i add it hot or cold
just that i cooked some on friday and should do something with them in the next 24 hours so they dont go to waste

Thats more or less how i do mine.  I cook the beets and slice them into a jar.  I use malt vinegar but I put about 2 table spoons of sugar to 1pt of vinegar because i like them a bit sweeter.  I pour the hot vinegar onto the sliced beets and put the lids on straight away so that as they cool you hear the bubble in the lid pull down .

thanks spana, just got back from a meeting and have no malt vinegar, but will do this tomorrow as have some more to do now thanks to hubby going to the plot

I was going to follow Vals recipe for quick spiced vinegar for doing mine yesterday but didn't have any muslin or other thin fabric that would have done the job so I just cooked & peeled the beets, sliced them into the jar (99p from Ikea) and poured the distilled vinegar onto them.

Couldn't resist the urge so tried a slice today; they's lurverly!  :happy:

got my book today so thats helpful
have been saving jars (to everyones disgust) for a while so tonight while they are all out i will pickle the beets i have picked

pink fingers for tomorrow then  :lol: :lol: :lol:

snoozi did they pick up the vinegar flavour that quickly then?

they did titch,  but because they'd only been in the vinegar for a day or so they were still sweet too :happy:

I was surprised at the colour of the water from boiling, and then how purple the vinegar went and how quickly!  I always thought that shop bought beets had food dye added :ohmy:

got beets in cooking now, got some chilled in the fridge i cooked the other day, so will combine the two and in about an hour pickle them
cant wait i am so excited

got a picnic tomorrow so think i will take some in a littel pot
be rude not to i think  :lol:

I found something that said use white vinegar on google so I did for the small jars I did one small teaspoon of sugar per jar, they are lovely. more beets please  :lol:

If im making myself a sandwich with beetroot in I hook the slices out of the jar and into a sieve and rinse under the tap, then dry with kichen roll.  It still tastes pickled but  not strong pickled :lol:

I made lots of pickled beetroot last year and it was lovely (it also lasted until 2 weeks before this years crop was ready which was lucky!)
One of my very favourite things to eat is a slice of beetroot, a slice of cheese and sliced pickled onion on a cracker (don't laugh until you've tried it!).
Would it work if i included sliced onion with my sliced beetroot when i pickle it this year? I have lots of red onions that grew well. Would they be too strong?

Would think so, thats why you salt pickled onions, to draw out water.  I cant see why it would work well.  In fact from the back of the mind i remember see a recipe like it.

Pickled beetroot and salad cream sandwiches are my comfort blanket along with (dare I say it Marmite on toast).  The two things I love most in the world. (well apart from my daughters, my husband etc, etc)
