Title: Freezing black currants to make jam later

I’ve had a great crop this year out of 3 bushes and made lots of jam and jelly.
Can I freeze the remaining currants and make jam later in the year? And how good will jam from frozen currants be?

Yes, you can. I find if I leave the fruit in the pan overnight to thaw, it releases all it's juice, so I add only a tiny drop of water, if any to dissolve the sugar. Keep an eye on it, because it seems to reach setting point really quickly  :)

Yes, they freeze really well and are perfectly good for jam.
