Your favourite soup recipe.

I am a huge soup fan and if we eat out for starter its always soup, the family roll their eyes.

So whats your favourite home made soup, recipe if you have time.

My favourite is beetroot and butternut squash but having said that we have just had a creamy turnip soup with crispy bacon which is up there with the other.

Kids like leek and potato, hubby hates all soup as it contains VEG.  ::) he's such a good veg grower but eating its a different matter.

I dont really follow recipes, i am a bit of a throw it in and see how it looks type of girl.  ::) i will try and work out what and how much i use.

broccoli with or without stilton i like it because i class it as a freebie soup cos i only use the stalks  :) tho one for you roast beetroot is very nice to

Ohhh i have never tried roast beetroot soup.

I cant eat cheese so i'll pass on that stilton  ???

Butternut squash (got the recipe on here), leek and potato and during the winter shin of beef with lots of veggies.

TURNIP SOUP RECIPE

8 medium sized turnips
2 small onions
2 cloves of garlic
2 small potatoes diced
2-3tablespoons of olive oil
Salt and pepper to taste
4 cups of chicken or veg stock
1 cup double cream to thicken.


Peel turnips chop into small chunks
Chop onions finely
Chop garlic
Dice potatoes
Heat oil and add onions and salt and pepper till soft about two minutes
Add garlic and cook for a further minute.
Add potatoes, turnips and stock
Cook until really soft and then blitz till smooth

Add cream and re-heat, you can add more or less cream depending on the thickness you like.
Add streaky bacon pieces to the top and serve with warm crusty bread.

roasting beetroot keeps the soup beetroot colour peel the raw beets ( iwear gloves) quarter them drizzle with olive oil and roast till softish ina sauce pan (a big one is better) sweat off a onion or two depending on how much beetroot your roasting add garlic cloves to your preference when the beetroot is roasted add to the sauce pan add a couple of table spoons of plain flour this will give a creamy texture mix all together add a good pinch of salt and black pepper add enough waterto just cover the mixture bring to the boil and immediatly turn down to simmer for about20 to 30 mins take off the heat and blend all together till smooth hand blenders are ideal can   be kept in a fridge and reheated top mine off with a sour cream swirl

They have to be home grown veg based soups or it doesn't count  :D

I like cream of fennel soup
Celeriac and smoked bacon
Courgette and blue cheese

Personally I prefer to push through a sieve rather than using a blender :)

Curried parsnip soup is our favourite.
Devastated last year to have NO parsnips  :ohmy:

made loads of soups from allotment and always come back to my tomatoe soup with a hint of chilli Yum. Also quite like cucumber soup when i get a glut x

Add some rice wine or dry sherry to your broccoli and Stilton or cauliflower and Stilton lifts it too a whole new level :)
