found a lovely recipe for these with broccoli, it calls for grated cheese in the coating mixed with herbs and bread crumbs. I am planning on blitzing some rice bread into crumbs. Its as hard as rock anyway so it should work but is the cheese or lack of likely to make much difference?

No I don't think so, would just add some extra protein & flavour.

Brilliant will give them ago, its just minced chicken with broccoli coated in bread crumbs and herbs with quinoa.  feel more positive now I have had a few hours shopping for ingredients.

Do you cook the quinoa before you use it to coat the chicken.

Yes also the broccoli.  also got aome super soup ideas, just need to convince harry soup is friend not foe.
