Title: Eggs and Bacon!

Hi!

I have loads of Eggs and Bacon and apart from the obvious fry up or a quiche has anyone any ideas what I could make for tea?

Thanks Val!  That sounds really nice  :D   Only I have no leeks wonder if it would work with Kale or Brocolli (sp)?  As I have both of those.  Maybe onion and brocolli would work :?:

Let us know how it works out with onions and brocolli.......you've got me hungry now.......bit late to send John round the lottie for the leeks!

WW's Simple Fried Rice.
Serves 4

Ingredients:
Eggs – lightly beaten - 3
Bacon – cut into 1” strips - 200g
Onion – roughly diced - 1 medium size
Carrot - diced - 100g
Rice – boiled and allowed to go cold - 450g
Mushrooms – roughly sliced - 100g
Peas - 50g
Green Peppers – cut to 1” slices - 50g
Light soya sauce - 2tbsp
Spring onions - chopped - 2
Oil 2 tbsp

Method:
Boil the rice and set aside and allow to go cold. (or use cold leftover boiled rice)
Beat the eggs with a little salt. Fry as an omelette, cut into 1” squares and set aside.

In a wok or frying pan, over medium heat, cook the onion and carrot in a tablespoon of oil until softened.
Add the bacon cook for 1 minute more.
Add the mushrooms, peas and green pepper and continue cooking for a further 2 minutes.
Add the cold cooked rice and stir well until rice is in separate grains.
Add the soya sauce, then the egg squares.
Cook for about 1 more minute.
Sprinkle with the spring onions and serve.

This is a quick, easy and filling dish.
You can vary the recipe by adding, for example, prawns, chillies (if you want to give it a kick), leftover cold pork or ham, bamboo shoots or water chestnuts, or just let your imagination run riot.
Another variation is to used cooked cold noodles instead of rice.

Any ideas as to quantities of each of the ingredients? Working on say serving 4. Then I'll put it in the Recipes Section under submitted by WW. Ta. :D
