Cherries,how do you preserve them?

I've done a search but not come up with what I'm looking for.
I've got a cooking cherry tree,might be Morello or Stella springs to mind. I've made 1 batch of jam & now have almost 2lbs more ready to do something with, but what?
Answers on a postcard please. I was thinking to have them over ice cream but I assume I cook them & then bottle in syrup. Anybody able to help :unsure:

Thanks Auntiemogs I saw that in a thread but although I drink brandy occasionally  I don't think I would use it.

How about this?  Its from one of my 'just look at the pictures and drool' cook books and sounds like heaven  :D

Cherry chutney

2lb sour cherries
12oz sultanas
1/2 cup white vinegar
5oz brown sugar
1/2 tsp ground ginger
1 tsp ground allspice

Halve and pit the cherries.  Place in a saucepan with all the other ingredients and stir over low heat until sugar dissolves, then bring to a boil.  Cook 3-5 minutes, then reduce the heat and simmer for about 20 minutes until the chutney thickens.  Ladle into warm sterilised jars and seal.

Would make great winterval gifts  :)

It involves simmering the jars in a saucepan, in the same way as for jars of tomato passata, but it's not difficult in a big pan. You can re-use jars, the ones with a pop-up middle are best, cos it's easy to tell if they've sealed

I just toss mine into freezer bags and into the freezer. Through winter I use them to make cherry upside down cake. Yummm.

 thanks every one.I've cooked them gently, added sugar & they've been in the fridge until now when I've taken the chill off a few added a slosh of Brandy,before eating them with some yoghurt,and very nice they were too. I know there will be some more to harvest when I go to the plot tomorrow. I think I will freeze the next lot.
