problem with pickles

I pickled lots of red cabbage in autumn. Gone to use them and about a inch of the cabbage is not in the vinegar. Will they be ok to use .  Will I need to remove the cabbage which is not in the vinegar. Thanks

It will be fine - as you say just remove the cabbage that was not covered by the vinegar. I have done that in the past and am still here to tell the tale.

You can get those plastic things that keep the veg pushed down in the jar , i got one in a jar of peppers .

I put in a wodge of crumpled baking parchment in the top of the pickle jars to keep the contents submerged.

But if you filled the jars to the very top with the vinegar when you made them, it is probably some of the vinegar that has evaporated and the vegetables will have absorbed enough vinegar to preserve them.
