I made a recipe last year that entailed simmering the berries with very little water for an hour or so, leaving in muslin overnight, then heating the juice gently with sugar to dissolve, before bottling with vodka.  It was ready immediately and  was delish, but I simply can't find the recipe anywhere. Can anyone help?

I think I may have found something along these lines - thought it sounded familiar.  It's an old fashioned drink called a fruit shrub. Not instant, but sounds nice.

Simmer your fruit - currants, berries, anything acidic and strain

300ml strained juice
600ml rum/brandy/vodka
Finely grated zest of 1 orange
1 tsp grated nutmeg
300g granulated sugar

Mix the juice, spirit, orange zest and nutmeg and put into a jar - leave 7-10 days in a cool dark place
Transfer to a pan and add the sugar.  Heat gently to about 60 degrees centigrade and stir until the sugar has dissolved.
Strain into bottles.

This recipe says it's better matured for a while, but you could try a quick version by making the heating the juice and sugar together to make a syrup, then adding vodka
