« on: August 17, 2012, 18:04 »
I have this great recipe for a bean relish cum side additive.. for my glut of beans this year... NOT - germination was pathetic so only a few plants growing!!   :(

Curried Beans… by GJC

4 lbs fresh green beans
2 lbs onions
3 cups sugar
3 tablespoons flour
3 cups vinegar
2 tablespoons curry
1 tablespoons mustard powder
4 cloves chopped garlic
1 tablespoon salt

Cut up beans and onions. Boil till softish. – drain well.

Boil vinegar, salt, sugar and garlic together.

Mix flour, curry and mustard and a little vinegar mixture to make a paste then add the of the vinegar. Add this mixture to beans and boil for a few minutes.

Bottle while hot and close well.

Or cool and fill packets for the deep freeze.

OOOOO that sounds good. Will have a go at that after I have done my piccallili, bean and cougette relish and bean relish.

Sorry you don't have many at the moment perhaps with the better weather they will take off.
We had to have several goes with the beans this year but we succeeded and OH is coming back with full carrier bags full.

Freezer is now filling up with beans too to last us through the winter. :)

We had to start again with ours, too - I couldn't believe how quickly the slugs ate them when they first went into the ground from the greenhouse.

Because it was too late to sow more seeds, I had to buy replacements from the garden centre!  Feels like cheating, but at least we'll have something to show for it!!

It isn't cheating, it is practical thinking! :D

Thanks for the recipe. A friend gave me some once and it was lovely. I actually do have a glut of beans, despite the chooks thinking their base is a good place for lots of dust baths.

Runner or french dwarf.... a bean is a bean and as long as it's green it can be used..  :D

Two questions Gavin - if bottled correctly (i.e. hot relish into hot, sterilised jars), will it keep for several months like piccallili?  Also, are you using curry powder or curry paste?  Although my so-called 'crop' isn't up to this yet (barely had a meal from them so far due to the slugfest mentioned above!), my neighbour has just given me a huge carrier bag full!! Ta!  :D

Hi CC - mine keeps for a couple of years in the cupboard with no high tech sterelisation as such.. I put the jars in the oven for 15 minutes or so to get hot and bottle into them still fairly hot. I cover the lids with boiling water for 10 minutes then dry and onto the jars.. Curry powder is what I use but if you have paste just use it.
