Pear Chutney

7lbs stewing pears (after peeled, cored and quartered)
2lbs onions sliced and chopped
1 1/2lbs seedles raisins chopped
3 to 4lb apples (after peeled, cored and chopped)
1/2lb sliced stem ginger
5 garlic cloves crushed with a little salt
1 1/2oz salt
grated rind an juice of a lemon
1 1/4lb brown sugar
8 dried capsicums
6-8 cloves tied in muslin
2 quarts good vinegar

Put pears into an earthenware bowl with onions,raisins,apples,ginger,garlic, salt and lemon.  
Put sugar,spices and vinegar into a pan and boil for 3-4 minutes.
Pour over contents of bowl and leave 12 hours or overnight.  Then boil gently 3-4 hours or until dark and rich.  Remove and bag of cloves halfway through boiling or when the flavour is right for you.
Cool, jar and label.
