ok, so ive got some courgettes growing. Im not overley keen on them myself so want to do something quick, easy and impressvive with them for the wife - but i havent many ingredients

so what can you lot come up with - ive got courgettes, eggs, garlic, plus normal 'cupboard' stuff

Sweat some onions and garlic, add sliced courgettes and any herbs you have.  Beat eggs and add to pan and season well.  Cook through then add grated cheese and put under grill.  Throw on paprika or worcestershire sauce or chilli sauce if you feel like it.  Add any cooked veg you have in fridge at frying stage.
Cheese makes everything better.

thanks icey, but my cupboards are emptier than old mother hubbards ('cept the dog gets plenty)

what i did in the end was quote close though - fried a few strips of bacon in a little butter, added the crushed garlic and sliced courgette, let that soften. Beat egg, milk and butter, salt and black pepper, then added the lot and made a small omlette! :lol:

she said it was nice. I had a curry myself
