Hi,

What can you do with beetroot, apart from boil and then either eat as is or sling it in a jar with vinegar.

Does anyone have any suggestions for recipes?

I love roast beetroot, on a tray with other veggies, drizzled with olive oil and sprigs of fresh thyme. Lovely stuff, it takes on a lovely sweetness. Yum

There are tonnes of recipes with beetroots  :D   Cake is very popular as it soup. What about a cheese and beetroot toastie. Lovely  :D

beetroot risotto topped with a little/tsp of horseradish (fresh or creamed).

Oh, these are good ideas, and nice to read other people's actual recipes they use themselves. I grow beetroot every year and bake or boil them and then forget to eat them  :roll: so I'll keep these recipes in mind. I've a few cut out from magazines but it's not the same as seeing people's own choices. I especially like the idea of the toastie.

In the November Asda mag there was a recepie for a Corned beef hash type thing with beetroot in.  It was a dry american version really but very very yummy.  Of course I can't find the recepie to post though!!!

Chutney!

Beetroot chutney!!

Chutney with beetroot in it!

Yummy.  And it's got beetroot in it.

(One of my more successful experiments - can you tell?  Beetroot, apple, raisins, pickling vinegar, extra spices, sugar - can't wait to open a jar)

I like it grated with a tart apple, and add some olive oil and apple cider vinegar. So good!

I agree, we have opened our batch and guess whats been on the dinner menu ever since, LOL what more can you ask for beetroot every day

Heaven in a jar  :D
