I made courgette & dill soup and courgette pate on Saturday, had courgette & pepper sausages yesterday, swapped one of my green ones for someone's yellow (not really what I had in mind when I offered to swap stuff), gave some away at work and to friends and am thinking now I'm going to put some on my front wall at home and tell people to help themselves! I still have about another 100 I reckon before the season ends, although am just starting to get patty pans and yellow scallops, my grisette & tromboncino are the favourites and I'll just do them next year

I made a lovely curried courgette soup last night, my son absolutely loved it and he doesn't like courgettes.
I also make penne carbonara cutting the courgettes to roughly the same size as the penne and then frying off in olive oil and pancetta stir in the cooked pasta and then chuck in the cream and egg yolk and loads of parmesan. Lovely! x

Oh, and another good one is to pickle and marinade them, which is a hubby favourite, he likes them on his salad.
