This is one of those recipes with no measurements. I've been making it for years and just do it by eye. I also make it in a pressure cooker, so if you make it in an ordinary saucepan, you'll have to give it as long as you think necessary so that the veg are soft enough to easily blend.

Ingredients
Bit of oil
Onion or two depending on size and amount you're making
Garlic
Garum masala
Carrots
Apples (a couple of medium-sized ones per half dozen or so of medium to large carrots... sorry to be so unspecific)
Liquid (stock or water)
Plain yoghurt to serve

Chop onion(s), mince garlic and gently sweat them in oil or butter for five mins while peeling and roughly chopping the carrots.
Sprinkle garum masala into the onions to taste (I usually make about a litre and a half of soup and use about a quarter of a teaspoon just for a hint of flavour, but add more or less to your taste). Stir and leave to cook for half a minute or so.
Add carrots and sweat for a bit while chopping the apples. (I remove the core but don't bother peeling.)
Add apples.
Add stock or water (for a pressure cooker, I usually add half a litre and then add more while I'm blending).
For a pressure cooker: bring to high pressure and cook for ten minutes. Leave pressure to drop naturally.
Whizz up with a blender and add more liquid as required.
Reheat if necessary and serve with a squirl of plain yoghurt on top.
