when to eat?

Hello all you eggsperts'

What I want to know is when is the best time
to eat one's eggs? I  had a day old egg the other
day 'fried; it seemed a bit watery? I cant imagine
what a new boiled one would be like..it's not the yolk
but the white '......do they need to firm up ?  thanks.

its because its sooo fresh!i find my eggs are harder to crack i presume its because my girls are healthy they produce thicker shells. the watery white will firm up as the egg ages your just not used to it as you would never get a shop bought egg that fresh!!!! i keep mine a couple of days before i fry them use very hot oil and plenty of it and they will be lovely .we love ours poached the yolks are just so bright.enjoy :)

I always thought it was the other way round.  If the white is nice and firm then it is very fresh and as it gets older it gets thinner?  ??? AMJ its great that you are getting eggs, mine still haven't produced and haven't seen any squats either! :(

Hens do occasionally lay watery eggs but fresh eggs normally sit up high in the fry pan, fresh is best for all eating apart from boiled eggs for pickling etc when 2 week old ones are easier to shell.
A watery egg is normally a stale egg .
Also if some of the fresh eggs look a bit cloudy in the pan don`t worry this is normal.

Eat `em fresh. :)

Ps Carolbriar, my hens never have squatted they lay well though.

It just means you do not look like a cockerel. :)

It was only a week ago Carol that I felt like you 'no eggs'

im presuming you meant there was only a small bit of watery white around the edges? we wondered when we first started getting eggs so googled it and thats what it said  :)if they are very watery then im not sure why :)

Even fresh eggs can sometimes have watery whites, although generally its because they are older eggs or older hens, as in the case of ex battery hens!

Boiled eggs are better if the egg is a few days old because if they are too fresh, its sometimes difficult to get the shell off clean, but Yorkshire puds are better with fresh eggs!

Absolutely fresh eggs are ideal poached ... a few days old for boiling and frying ... and older still for baking.
two daughters, nine hens, two goldfish, three cats ...
