Started the simple wine ages ago, went and bought heat mat. The "wine" is fermenting, so have put on mat, still with towel wrapped round. As sediment has sunk, should I shake it up,add more yeast (onlyvery small bubbles, but they are there!!) Help

no if the yeast is falling then just leave it its the fermentation slowing down iff you shake it up it will just take longer to clear and adding more yeast is fruitless hope this helps

Thank for this, it is doing little bubbles quite happily.

If the sediment (lees) have formed a firm layer on the bottom of the wine, it is better to syphon the clearing wine off into another demijohn (D.J.) as the wine may pick up taints from the lees. If after doing this the wine is below the neck of the DJ, top up with water and sugar mixture cooled to blood temp'. Cheers, Tony.
