From what I remember (and it is long time since I've done one), I used to add bay leaves, some carrot and onion and black pepper.  Boil it in just enough water to cover.

When still hot, you need to skin it & put into a bowl with a plate on top + lots of weight.  Reduce liquor by boiling & add to cover the plate.  Keep remaining liquor for soups.

Muntjac would be yer man though ... have I missed anything out munt?

you do not have to brine a tongue .i do my ox tongue this way no salt at all . just boil it peel and press it .i have a very old tongue press see picture

ok so heres how to home press a tongue boil it for 40 minutes with some herbs in the water . a spoonful of mustard powder .. or pressure cook for 20 mins and same herbs etc take it out and let it cool peel the skin from it and discard then take a normal pan that fits the tongue tightly put a side plate on top and using wieghts..... bags of sugar ...more heavier the better ....on the plate press it down add more wieght as the plate will carry
i do mine with the press but it broke when i over screwed it so i had to revert to the wieghts method now its fixed  :wink:

My mum used to cook it with veg in a broth and serve it with a guerkins sauce.
It's also nice cold diced up in a salad with lots of green onions.
Do not underestimate the therapeutic values of weeding!

:shock:  Yuk.....i know this is strange but i've never tasted tongue.  Just can't bring myself to eat it...and Dad tried to get me to try it as was a fav of his.

Yes i do like Oxtail soup in moderation...but, it's the thought of a tongue!
