Smoked trout with Pink Fir

Following on from Muntjac's plaice roes ...

Got a couple of trout from my father-in-law recently so I was pleasantly surprised to find out, on thawing one, that it was a brown trout and not a rainbow.  Probably a wild one but, round here, its best not to ask too many questions when you're given a fish!

Got the smoker going outside & hot smoked it slowly over oak which I get from the whisky barrel fellow.  Into the oven foil-wrapped for the last 20 minutes while I steamed some Pink Fir Apple potatoes and popped out into the garden for fresh parsley and sage for the herby melted butter.

HELL it was good!

P.S. I used to love roes, muntjac, but haven't been able to face them since I got food poisining out of a dodgy tin when camping in Dublin.

It sure was Sal.  The fishcakes tonight were almost as tasty.

You'd have enough room for a wee trout loch somewhere on your 25 acre patch.
