Courgettes can be sliced into noodles with a julienne peeler . Then just sauté and serve as you would spaghetti or Asian noodles. This is ideal for getting the children to eat more vegetables.

I use these to serve with loads of different stuff, and they are very tasty.

Tonight I sliced & fried in olive oil & knob of butter tiny courgettes( that’s my sneaky plan to not having a glut of them!😂), then when browned & about cooked & seasoned with salt & pepper & stirred through some dried breadcrumbs & Parmesan. Very nice they were too. If I’d have had more time I might have mixed the crumbs & cheese & sprinkled over the courgettes in an oven proof dish & then baked them or even stirred some cream cheese through the courgettes before baking with the breadcrumbs & cheese on top. A bit of garlic would have been nice too

Courgette dolcelatte soup going down a storm here at the mo. This uses 900 g of em in one hit 😁

Made loads of courgette choc chip muffins while the kids were over

I julienned some yellow ones for our oriental style salmon parcels in foil last night 😋

As I want to grow just one courgette plant next year (giving up allotment), does the team here have any views on how to grow a single plant without Mrs Growster seeing it?

I rather like the idea of a climbing plant, but have never tried one...

(I can hide it behind a large mahonia in the front garden - she'll never notice..;0)

Although it lacks in the invisibilty stakes, I can thoroughly recommend Parthenon as it produces courgettes without the need to be fertilised, which is perfect if you have just the one plant and female flowers are open with no male flowers nearby. Beautiful dark green shiny courgettes that taste delicious

Courgette and Ginger Jam

1.5 kg (3 lb) courgette/marrow/zucchini, peeled and deseeded weight. Note I don't bother to peel them. Only if the skin is very thick or hard.
4 lemons
50g to 75g (2 to 3oz) root ginger
1.5 kg (3 lb) sugar

Finely grate the lemons then juice them. Place juice and peel in a large container.
Peel and finely chop the root ginger. (I sometimes grate it instead of chopping.) Place in with the lemon juice.
Cut the courgette into small cubes and steam gently until tender. Place into the container with the lemon juice and ginger. Stir in the sugar. Cover and let stand for 24 hours.
Place into a large saucepan and heat slowly till the sugar dissolves, stirring to keep things moving.
Bring to the boil. Boil fairly briskly until the courgette is transparent and the syrup is thick.
Test for setting. Note Courgettes are low in pectin and the jam will never set firmly. It is more a conserve.
If you want a firm jam add some commercial pectin and follow the instructions.
I prefer a firm jam and always add the pectin.

 Makes about 2.25 kg (5 lb) of jam

They're all your plants from the seed you sent me Snows, and mighty fine chaps they are too! I'm using just two Zucchini, and one yellow! (Gave away the other plants, and got a 'virtual hug' and a couple of cheese scones from a lovely chum as part of the bargain)..:0~

The flower on one of them was the biggest I've ever seen, at least eight inches across, and made a fabulous veg in just a day or so, so your's won't be far behind!

Lovely Mr G, glad to be of help & even better you got to help someone else too. Minexare now out of the propagator & in tge greenhouse with the majority of the 20, yes you read that right 20 germinated lol. I wasn’t taking any chances this late in the day so should have some to give away too if any one wants any that is!
