Hi there

Our pumpkin plant succumbed to Mildew this week, leaving two large but unripe pumpkins.  They are about 2/3 green, 1/3 orange, and the flesh inside is pale, spongy and not very appetising.

I'm loath to throw them out however, so if anyone knows of a jam or chutney recipe for unripe pumpkin I'd be grateful for a pointer.  I'll use the jam jars that I won't be putting blackberry jam into this year  

On the plus side, we had our first Galia melon yesterday!!

they will ripen off the plant just place them in the sun and they will be orange in no time.cant help you with the spongy flesh though.

Yes I cut one open to see the condition.

I know that the skins will turn orange off the plant, but as far as I'm aware, cucurbits such as melon, pumpkin, squash won't actually ripen off the plant in the same way that an avocado or a banana will.  I don't think that their flesh will ripen up.

Any thoughts?
