Savoury Scones
« on: February 25, 2019, 16:26 »
Please can you help.    The garden club spring show has a class for 3 savoury scones.   I do not want to make basic cheese ones.   I tried a lemon and thyme one at the hospital.  The volunteer gave me the recipe, but it was fairly complicated, although quite pleasant.    I considered Ras al Hanout with parmesan.    I have never made these.    Please have you got any more suggestion  -  I would very much like to win  :D
Also do I always have to make them with butter ?    Thanks,  Mrs Bouquet

I have made savoury walnut scones, which were very successful, and also ones with fresh herbs in them: chive and parsley was very tasty, oregano and ground black pepper were also good.

My Greek friend Anna made beautiful parsley & onion scones and after searching through a pile of my old recipe scrapbooks I've found them ;)

2 cups self-raising flour                                                200C oven
2 tablespoons finely chopped parsley
1/2 an onion finely chopped
3 shallots finely chopped
1oz butter or hard margarine
1/4 pint milk appx
(optional - egg to glaze)

Rub butter into flour until the mix is like breadcrumbs.
Add all the other ingredients and enough of the milk to make a soft dough.
Knead gently and roll about an inch thick.
Cut into rounds and place on a greased baking tray.
Glaze with milk or egg and bake for 12 -15 mins.

I like the inclusion of shallots... might give these a go. I usually use buttermilk or very diluted full fat plain yoghourt instead of milk for savoury scones. I am sure milk does the job of course! Just habit I guess

I have never used Buttermilk, is it the same amount as milk ?  Also what would be the dilute for plain yogurt and water (or is that milk ?)  thanks, Mrs Bouquet

For 450ml of total liquid once it is mixed up, I put in150ml full fat plain yoghourt and 300ml water. So it is a ratio of 3parts water to one part yoghourt

I like a good scone, I make a cheese & bacon loaf that slices well, I bet you could adapt a scone recipe to include the same. Or how about red onion & rosemary with some feta cheese?

The jury is still out on which ones to make.   The trouble is, the schedule doesn't say they all have to be the same - so I thought of making three different.  The judges will only taste one though, and if they are labelled they will disqualify them.    They all sound so scrummy,
Perhaps, you could all send me one scone of your suggestion, then I could trial them.
Thanks for the info on using yogurt and buttermilk, I have never tried that before.    Thanks again friends,  Mrs Bouquet

You could put all the various names in a hat and draw one out to make a smallish batch.. and then another... and then another....

Good game to play  :D :D
