today was day 1 of my fresh yeast bread experiment. I was in sainsburys this morning and remembered to ask at their bakery, for 60p I got 200g of fresh yeast, probably enough for at least 10 loaves.
this afternoon for an experiment I baked the usual amount for a 1 1/2 lb loaf, mixed , kneaded and rose as per normal, and then baked as two small loaves, Its cooling now, but I have to say I am impressed.

its a better rise than I would have got just using dried yeast, and quicker to double in size than usual too.

Yes, it does work quicker - but the easily reached supermarket here (Tesco) won't sell it any more  :(

I tried buying a block on fleabay, but freezing it, to use later, didn't seem to work for me.

Right now I'm playing with sourdough starter and an overnight rise  :D

well it has produced a nice textured loaf too so all is well (nice flavour too)

Both yeasts need to be fresh to give good results, the flour too is better is fresh. 

I have used out of date dried yeasts and had good results as you can raise a flagging dough by various methods if you find your loaf not rising very well, heaven forbid  :D

I like organic fresh yeast but being able to get it from Waitrose/Ocado is tricky. When I can get some I freeze it and find it works fine. 

I just love making proper bread. Mmmmmmmmmmmmmmmm

Mmmmmmmmmmmmmmmmmmmmmmmm - fresh yeast!! I used to love eating it when I was little. Mum would buy some to make bread, only to find just a few crumbs left in the paper when she came to use it.

rolls this morning, then a loaf in the bread machine this afternoon as all the rolls mysteriously vanished (I was complimented on the flavour and texture) the two rolls I had just after they had cooled nicely were very nice, the loaf came out a bit small, but I had changed the setting but used the same mix as I normally do (I use the french bread setting and control the loaf size with how much yeast I use, and I am still getting used to the amount of yeast needed)

roughly 2 teaspoons (level) but I am still experimenting with it myself.
