Broad Bean Pod Wine
« on: May 22, 2009, 15:29 »
I love wine
I have grown a lot of broad beans this year
ergo ...

I have found a couple of recipes for broad bean wine on the web, but before I take the plunge has anyone else tried making it?

This reminds me of the "Good Life" - with the pea pod wine - hope yours will be better than Tom & Barbara's, if I remember it was a wishy washy milky colour! :tongue2:

Hello

I am trying this recipe found on another allotment site. Will report back in 6 months time on the result. If no reply is forthcoming take that as a warning!

4 lbs empty pods
2 lbs granulated sugar
2 lemons
2 oranges
3-1/2 qts water
1/4 tsp tannin
1 tsp yeast nutrient
wine yeast

Use fresh young pods as soon as possible after they have been picked and shelled. Freeze them if you need more than one shelling session to collect enough. While bringing the water to a boil, thinly peel the oranges and lemons and add the peelings and the pods to the water. Hold at a low boil for 30 minutes and remove from heat until cool. Strain the liquor over the sugar, yeast nutrient and tannin and stir well until dissolved. Discard pods and peelings. Add juice from lemons and oranges, stir and add yeast. When ferment is active, transfer to secondary and fit airlock. When fermentation is complete (specific gravity of 0.990 or less), rack into bottles and age at least 6 months before tasting. Makes a light, German-style dry wine.

Yes, apparently a cup or 1/2 a cup of strong tea does the job. I just left a teabag in the mix when I was boiling it up.

I remember years ago when my dad was blanching broad beans before freezing, he decided to make a wine out of the liquer. It was superb.
Oh for those halcyon days of England long ago

Interim report

Well, it's quite nice, but definitely "beany". It hasn't cleared yet - still in the demijohn - but I had a quick taste. Think I'll leave it til my first broad beans arrive in May then bottle and sample a bit more.

I made some hawthorn flower wine which was quite horrible after 6 months but is pretty good now. It's amazing what a difference a few months makes.
